How do I calculate liquid egg usage?
The leading liquid egg companies suggest the following:
1 lb of liquid eggs = 10 large Eggs
If you are cooking for 100 people, assume 2 eggs per person and you would need 200 eggs.
Based on the suggested ratio above, you would need 20lbs of eggs per 100 people.
